What To See In Old Town Quito

I’m planning a trip to Quito and I’m wondering what to see in Old Town. I’m looking for something with a historical feel, and I’m hoping to get a sense of the city’s culture. I’m interested in learning about the history and architecture of the area, and I’m hoping to find some interesting places to explore. I’m also looking for some unique restaurants and shops to check out. Any advice on what to see in Old Town Quito would be greatly appreciated.
